Together with acacia honey, orange blossom honey is one of the best known in Italy due to its notoriety and diffusion. Orange honey is always very light in color, from straw yellow (when liquid) to white (if solidified). It is slightly crystallized most of the time, with crystals that melt pleasantly in the mouth. The very delicate flavor and aroma recall the orange blossom flowers where the bees have foraged. Due to its recognizable aroma and scent, it is one of the most used honeys in pastry, often for the preparation of nougat. It goes well with cheeses from the area of origin of the pollens, such as Ragusa and caciocavallo. Also excellent as an alternative to refined sugar in cold drinks.
