Eucalyptus honey is mainly produced from two distinct plant species: one that blooms in July-August and the other that blooms in September. Eucalyptus honey is a very aromatic honey, reminiscent of licorice. The crystallization is fine and compact, very pleasant on the palate. Harvest period: June-July and September. Harvest area: Sicily and Calabria. Color: Clear when liquid, beige when crystallized. Aroma: dried mushrooms and licorice. Flavor: toffee, malt and licorice.
