Lavender honey has well-defined peculiarities. In its liquid form, it has a color ranging from straw yellow to amber. However, this type of honey has a strong tendency to crystallization, which occurs fairly quickly and leads to the formation of small and medium-sized crystals, also changing their color (beige-white). The smell and taste are very particular, described as quite intense, with a floral and fruity aroma.
Lavender honey is not very common, being rather complex to obtain, but it has extraordinary properties, as well as a particularly characteristic taste.
First of all, it is a great calming for the nervous system and helps relieve stress and tension, both physically and psychologically. For this reason, it is recommended in cases of anxiety, insomnia and stress headaches. According to a Spanish study, this honey, in fact, turns out to be the richest in tyrosine, an amino acid used in the treatment and prevention of some pathological conditions involving the brain, including depression, anxiety and stress.
Another very important property is that linked to its antifungal activity, especially against the fungus Candida krusei, according to studies conducted by Spanish and Portuguese researchers.
Like all other types of honey, lavender also has a certain concentration of antioxidants, useful for counteracting the effect of free radicals, and helps to solve some problems related to the respiratory system, such as cough and sore throat. In addition, it performs a healing and disinfecting function. Recommended as an energizer not only for athletes, its rich iron and manganese content make it very useful for all those with anemia.
