In the specific Piedmontese variant, tagliolini are better known by the dialectal name "tajarin", in particular from the Langhe. Tagliolini are a cross between capellini and tagliatelle, and go well with light sauces. Especially in this variant with truffles, already tasty in itself, these tagliolini give their best even if only seasoned with a few drops of good extra virgin olive oil.
